Why Smoke Queso Dip?
Traditional queso dip is typically made in a crock pot, oven, or even slowly simmered on a stove. Those cooking methods are easy and convenient for most people.
However, I’ve come to the conclusion that if you can bake something, you can smoke it. I’m not saying it smoking makes everything better (although there is an argument to be made there), but Queso Dip was born to be smoked. Just sayin.
Ingredients for Smoked Queso Dip
Seriously…this is all you need to make simple, delicious queso dip :
- Velveeta cheese – 16 oz
- Rotel Diced Tomatoes & Green Chilies – 10 oz
- Turkey breakfast sausage – 16 oz
- Cream of Mushroom Soup – 10 oz
- Optional – add some chopped onions and jalapenos for an extra kick
How to make Smoked Queso Dip
- Preparation: Cook sausage to package directions. Cut Velveeta into 1″ cubes.
- Preheat you smoker (Any type, Traeger Pellet Grill, etc): Preheat your smoker to 225°F. Stock your fuel source for 1 – 2 hours.
- Combine ingredients: Place all ingredients into whatever you will use to cook inside the smoker (baking dish, skillet, dutch oven, etc.) and stir.
- Smoking Process: Once the smoker has preheated to 225°F, place the pan inside. Close the lid and let it smoke for at least an hour (or more if you desire)!
- Pro-Tip –> Stir as you go: I recommend opening the smoker to stir all the ingredients every 15-30 minutes. However, you don’t want to open the smoker too much. Every time you stir you effectively change the surface which allows more smoke to be soaked up.
- Remove from smoker: Once cheese is melted into a smooth, creamy consistency you are ready to roll! Ingredients are usually well combined and melted after 1 hour. For the record, going an extra hour won’t hurt a thing and the dip will take on more smoke flavor.
- Serve: Eat it by the spoonful (yea, no shame!), grab chips, fritos, etc to begin digging in.
What makes this smoked queso dip recipe (sort of) healthier?
I’ll state up front, you probably don’t eat Queso Dip in order to be healthy. However, saving a few calories can still be beneficial….right? That’s what I tell myself anyway…
Our simple solution for (sort of) healthier Queso Dip is Turkey Sausage. Most queso dip recipes call for ground beef of pork sausage. While these are certain delicious and option for this recipe, replacing them with Turkey sausage can save 40-60% of the calories.
Why Rotel and Velveeta?
Rotel and Velveeta are classic ingredients in our smoked queso dip recipe. Rotel adds a zesty tang while Velveeta gives the dip its creamy, melt-in-your-mouth texture.
I’ve just come to accept that these two are a match made in heaven. However, I’ve also come across some interesting reading on how they got that way. Check out this article about how Rotel and Queso became so linked together.
